Peanut Butter Chocolate Protein Cookies

Haven’t posted a recipe in quite some time, so why not make a comeback with some delicious f’n cookies?! They’re cookies, so they’re not exactly healthy, but they’re boosted with protein powder AND they’re vegan friendly!

Ingredient List

    150g ap flour (1 1/4 cup)
    120g sugar (1/2 cup)
    50g plant protein powder (~1/4 cup)
    1/2 tsp salt
    1/2 tsp baking powder
    42g vegetable or coconut oil (3 tbsp)
    80g peanut butter, melted (5 tbsp, ~1/3 cup)
    90g almond milk (5 tbsp, ~1/3 cup)
    10g cocoa powder (2 tbsp)
    40g peanut butter powder (4 tbsp)
    dark chocolate chips
    flake sea salt

If you don’t have a kitchen scale, I included volumetric measurements as well! For me, I was able to make 8 giant cookies that each came out to about 250 calories and 11g of protein. Depending on your choice of protein powder and size of cookie, your final results will vary. Step-by-step pictures are included at the end of the recipe.

Variations and substitutions:

  • Gluten free: you can use oat flour, however you’ll need to change the amount of milk. Oat flour and wheat flour absorb liquids differently, so add just 1 tbsp at a time until you get the right consistency.
  • Non-vegan: you can use regular milk as well as a whey-based protein powder.
  • If you don’t have peanut butter powder on hand, it’s not necessary, they’ll just be less peanut buttery!
  • Flake sea salt is fancy af, but you can use a dash of regular sea salt or kosher salt on top. Salt is a great addition to peanut butter and dark chocolate
  • I did batches with coconut oil and vegetable oil. Taste-wise I didn’t find much of a difference, but I think using vegetable oil resulted in a slightly softer cookie.

Directions

Preheat oven to 350f and line a baking sheet with parchment paper or a baking mat.

Begin by combining all the dry ingredients into a bowl: flour, sugar, protein powder, salt, and baking powder. Whisk together. If you’re wondering what the black stuff is in my bowl, I used a smoked salt I had on hand. For this batch, I used a vanilla protein powder, but in other batches I also tried out a chocolate protein.

In a microwave safe bowl, add the peanut butter and oil. Microwave for 30 seconds at a time until peanut butter is melted. Add the peanut butter, oil, and milk to the dry ingredients. Mix together until a paste-like consistency forms.

Divide the dough in half. To one half of the dough, add the cocoa powder and mix well. To the other half of the dough, add the peanut butter powder and knead to combine. Split each dough into 8 equal pieces. Take one piece of chocolate dough and one piece of peanut butter dough, roll together to form a ball. Press each ball flat onto the baking pan as they will not spread when baked. Add chocolate chips and flake sea salt.

Bake for 12-14 minutes.

Combine all the dry ingredients into a bowl. Whisk together.

Microwave peanut butter and oil together until melted. Add peanut butter, oil, and milk to dry ingredients. Stir until paste-like consistency.

Divide the dough in half. Add cocoa powder to one half. Add peanut butter powder to the other half.

Split each dough into 8 equal pieces. Combine peanut butter dough with a piece of chocolate dough.

Roll together to form a ball. Press each cookie flat into a round shape. Add chocolate chips and sea salt.

Bake for 12-14 minutes. Let cool and enjoy!
